Crafting with Precision Fermentation: A Sustainable Cocoa Butter Alternative

Cocoa production faces environmental and economic challenges as global chocolate demand rises. Planet A Foods developed ChoViva, a sustainable chocolate alternative, and ChoViva butter, made through precision fermentation of oleaginous yeasts. Chemically 90% identical to cocoa butter, it offers similar sensory properties while reducing greenhouse gas emissions and water usage by over 90%. Monitoring of Fermentation Processes by Means of Impedance Flow Cytometry

Although being one of the oldest fermentation processes, optimizations in beer brewing are still possible.
